Last weekend our office was a sponsor at the first-ever Franklin National Pickleball Expo located in the West Palm Beach Convention Center.
Our booth needed to be set up so my wife and I loaded the van on Friday afternoon to get the job done.
We decided to go ourselves instead of bringing the kids with us as originally planned and realized something wonderful along the way… we were all alone, just the two of us.
We were able to catch up on the day, had fun setting up the tent, and just enjoyed hanging out together. The festivities just continued as we stopped by Home Depot and Costco to pick up a few essentials on the way home.
Not wanting the evening to end, we decided to top off our time alone together with a celebratory meal. A friend of mine told me a while back about this little hole in the wall Mexican Restaurant that made a great half-chicken dish that was near Costco, so we decided to give it a try.
The problem was that I did not remember the name of the restaurant's exact location. All I remember was 'hole in the wall', '½ chicken plate' and 'near Costco.' I drove past this diner with a Spanish name and a picture of an animated yellow chicken on the sign. I wasn't sure but figured this must be the place.
My wife was leery as she does not like to eat at places where there is a cartoon of the dish she is eating. However, our appetites were ravenous, so we decided this was going to be the place regardless.
We got in the restaurant, and I said to the cashier, "We've never eaten here before. Is the food good?" She looked at me with an expressionless face and said, "Yes. It's good." Then a big smile emerged, and she said, "It's the best!"
Then my wife and I lit up like a Christmas tree when we looked up at the menu and saw …Loma Saltado.
We have not been able to find Loma Saltado in Florida for almost two years now. We got to our spot & there on the table was the infamous Peruvian green sauce you put on the Saltado.
Our time together had reached a mountaintop experience and we both concluded this was probably the best impromptu date night we've ever experienced in the great state of Florida.
Sometimes it's the little impromptu health activities we participate in on a day-to-day basis that leads us to discover the hidden delights of good health that we have yet to attain.
For example, I know I have mentioned this before, but I have conversed with people who decided to pick up a racquet and start playing pickleball with a friend for the enjoyment of the game, only to come to an appreciation that after playing for a while they find themselves in the best shape of their lives.
They find themselves with more energy, greater agility, better balance, improved stamina, while feeling and appearing younger than other people the same age.
Don't forget that good health is often found in the journey itself so you might as well delight in the process along the way.
If you find ways to enjoy the process of maintaining good health, you will encounter gratifying surprises along the way that add value and joy to your life.
